Executive Chef, Terra Restaurant at Four Seasons Resort Rancho Encantado
Hailing from Barcelona, Spain, Chef José Fernandez spent his formative years working in Michelin-starred restaurants throughout his native country. It was these early experiences, along with memories from his own family’s kitchen, that inspired his culinary point of view – to use fresh and seasonal ingredients, with an emphasis on local, organic, and sustainable whole foods wherever possible. Fernandez is passionate about incorporating tastes of the local culture and regionally grown elements into his flavourful dishes, while also fusing traditional cooking methods with progressive techniques to create inventive, evolving menus that will bring something new to each dining experience.
With more than 20 years of experience, Fernandez joined Terra Restaurant from Four Seasons Hotel Westlake Village in Los Angeles, where he was Executive Chef for three years at the popular restaurant Coin & Candor.
Prior to joining Four Seasons Hotels and Resorts, Fernandez served in culinary capacities at various dining and hospitality establishments, including Peninsula Hotels and Ritz-Carlton hotels and resorts. His career has taken him to various regions across the country, including Laguna Niguel, New York City, Tucson, and Washington DC.
On days off, Fernandez can be found spending quality time with his family. He also leads an active lifestyle, favoring mountain biking and hiking around northern New Mexico’s diverse, expansive terrain; as well as exploring Santa Fe’s robust farmers markets and spending time with local purveyors.
