Chef de Cuisine, Inn at Anasazi
Chef de Cuisine, Oliver Cortez, studied culinary arts in San Miguel de Allende, Mexico; surrounded by a lot of flavor and tradition.
He started his career there in Rosewood San Miguel de Allende in 2011, where he developed a passion in hospitality and the impact high quality cuisine makes on guests. Then, had the opportunity to travel around Mexico, exploring flavors, products and culinary techniques from the locals. Years later, he moved to Ireland, and lived there for three years to learn more about the food and culture of other countries; spending valuable time, mostly in Spain and France.
In 2022, he moved to Santa Fe, N.M., attracted by its rich cultural and culinary history and began his career at the Rosewood Inn of the Anasazi where he leads the culinary team.
