Born in Guatemala but raised in Belize, Chef Mario de Leon learned the ‘how to’ in the kitchen with his grandmother. Truly passionate about fresh and locally sourced ingredients, Latin American and New Mexican Cuisines, and Farm to Table concepts; Chef Mario brings an array of flavors, and ingredients that enhanced Rosalea’s favorites like the Steak Dunnigan, Tournedos Bordelaise, Clams Lucifer and our very own French apple pie.
