Jaime Montaño has been the heart of the kitchen at Andiamo! in Santa Fe since 2014, bringing nearly three decades of dedication and culinary craftsmanship to the beloved Italian eatery. Having joined the restaurant in its early days, Jaime has worked at Andiamo! for 28 years, rising through the ranks with a commitment to seasonal ingredients, refined technique, and soulful, honest cooking. Jaime honed his skills under renowned chefs David Tanis at Café Escalera and Ken Calcionne at La Traviata, where he developed a deep appreciation for both classical and innovative approaches to Mediterranean cuisine.

His leadership at Andiamo! reflects a fusion of those influences, offering dishes that celebrate local produce whilestaying true to Italian tradition.

Known for his quiet excellence and deep roots in the Santa Fe culinary community, Jaime continues to shape Andiamo!’s identity as a welcoming neighborhood favorite with world-class food.
