for Boxcar and Admirals Cove Resort, brings over 30-years of culinary experience to
the table. His impressive career spans esteemed hotels, private clubs, and acclaimed
restaurants, both in the U.S and internationally, showcasing his unwavering passion
for culinary perfection and innovation. Renowned for his artistic and detail-oriented
approach, Eric’s meticulous attention to ingredients, flavors, and presentation
transforms traditional dishes into visually stunning, innovative, delicious works of

establishments such as The Ritz-Carlton, Starwood, Westin, Hyatt, and The Club at
Las Campanas. Each role has contributed to his deep understanding of luxury dining
and refined culinary techniques. Eric’s portfolio includes high-profile events at the
governor’s mansion, the Southwestern Association for Indian Arts (SWIAA), galas,
upscale weddings, birthday dinners, and corporate functions. In addition to James
Beard recognition, Eric’s accolades include wins in The Great American Seafood
Cook-Off; Souper Bowl and the Green Chile Cheeseburger Smackdown.
